An initial letter is typed, a floating window appears that shows a list of chars and the user then chooses the correct char from there. This is then inserted in the text. And so on. Check for WorldScript (aware) or Inline Input on the HTML IM on the Apple site - 'cos it may not be in the volumes on this list.
